Extraction of Color, Tannins, and the Winemaking Process

The crafting of red wine is a process of extraction and patience. Unlike white wines, here we look for intimate contact between the must and the skins (the grape pomace), which contain the anthocyanins—responsible for a color that ranges from the cherry red of youth to the garnet of great reservas—and the tannins, which provide structure and longevity. Fermentation is carried out at higher temperatures to extract the full essence of the varietal, followed by a maceration period that allows the wine to acquire its definitive personality.

Life Cycles: From Primary Fruit to Gran Reserva

In our selection, we journey through every stage of a red wine’s life. Young Reds (Tintos Jóvenes) are explosions of primary fruit, such as blackberries and raspberries, meant for immediate enjoyment. On the other hand, in Crianza, Reserva, and Gran Reserva wines, the oak interacts with the wine in the twilight of the cellar, polishing the tannins and developing tertiary aromas such as leather, tobacco, truffle, and licorice. Whether it is the structure of a Tempranillo or the elegance of a Garnacha, red wine is the inseparable companion to red meats, game, and cured cheeses.
